I love and enjoy baking, its always fun and truly simple to do. I learnt how to bake from my mum, and I remember the first time she baked was one of my birthdays when I was younger.

I later came to know that she baked the cake with a jiko, much to my surprise, I didnt think it was possible to bake without an oven.

Now, I can proudly say I bake most of my cakes with a jiko. Between you and me, they don’t always come out perfect.

INGREDIENTS

2 cups of flour
1 small cup of sugar
250 grams margarine
4 eggs
1/2 litre of milk

  • Light your jiko, with enough charcoal (not too much, not too little)
  • Grease your sufuria with a little oil all round, this way, the cake will not stick to the sufuria once its done.
  • Once you put your cake mix in a sufuria, you will need to divide your charcoal in the jiko in two.
  • You will put half of the coal in the jiko, and the other half on a lid that you will use to cover your sufuria with the cake mix.
  • Now, the charcoal needs to be red enough but very little on both sides. If you put a lot of charcoal the cake will get burnt and will not full cook in the middle. Case in point, the picture below:
  • Once you have covered your cake, you will need to check your coal every so often to ensure that it’s still producing heat, if not, you will have to fan the coal until it is red and producing heat.
  • You will continue to check on your cake to ensure that it bakes properly. To know that it is fully baked, you take a fork and insert into the cake and if it comes out clean the cake is ready.

Once the cake is ready, let it cool and serve. Depending on your preference, you can ice the cake, make custard or eat it plain as it is.

130g all purpose flour
200g sugar
45g Cadbury Cocoa powder
1 tsp baking powder
1/2 tsp salt

120ml buttermilk ‘Maziwa lala’
120ml vegetable oil
3/4 tsp vanilla
120ml water

250g butter, room temperature
350g dairy milk chocolate, melted
22g Cadbury cocoa powder
500g powdered sugar
Pinch of salt
75ml heavy whipping cream

You know every once in a while we love to bring out the swahili woman in us who are best known for their good cooking and their attention to detail even with the complex of the foods.

Most times it’s just for the satisfaction of saying ‘I can cook’ and other times it’s out of utter and pure experiment. Long story short, my younger sister had told me she would teach me how to cook a cake with a charcoal jiko and i said i would photograph it as we did it and share with my good peeps online who could try their hand at it.

My mum baked cakes often when i was younger and she would use sand and charcoal, I will do my research on that and let you know how that works.

Not all of us have the pleasures of a gas or electric oven in the house so for us with a charcoal jiko we can access, here is a simple banana cake recipe you can experiment your baking skills with.

It’s pretty simple to make and you can google many recipes to bake online using the same method. It is important to note that very many bananas were saved from getting spoilt as i have learnt that banana cake is now my mums best way of enjoyinng bananas when they get too many in the house and we can only have so much in a day.
