How to bake a potato in the microwave

You could spend 15 minutes preheating your oven and then another hour baking your potato, but why would you ever do that when you can microwave your potato in just 7 minutes? Especially in the summer when the days are already hot enough on their own, a compact microwave is the perfect alternative to baking without the intense blast of 350° heat.

Wash it.

You’ll need to clean your potato first, especially if you like to eat your baked potato with the skin on. Give it a thorough scrub to get all the nitty gritty off, rinse well, and dry well.

Poke it.

With a fork, stab your potato all over: this helps the steam escape during the heating process to prevent a potato explosion inside your microwave, and helps the potato take on a fluffier texture when cooked. It’s an important step so don’t skip it! If you want the skin to turn a little crispy, be sure your potato is totally dried off from the wash, then massage it with a little bit of oil right before it hits the microwave.

Microwave it.

We like a traditional russet potato for our baked potato, but you can really give any tuber variation this same treatment—depending on the size and density of your potato, cooking times will vary. Start with 3 or 4 minutes, then flip the hot potato with a pair of tongs and continue with an addition 3 minutes of cooking time, adding more time as necessary to get the perfect tender, creamy, baked potato.

Top it.

Go easy or go crazy with the toppings, your choice! Just because you’ve made a meal in the microwave doesn’t mean it can’t be exciting. Load it up plain and simple with pat of butter, a dollop of sour cream, a pinch of salt and pepper, and your favorite fresh herbs. Or add some cheese and pop it back in the microwave for a minute to get melty, then top with crispy bacon. Or, opt for the roads less traveled: pesto with freshly grated Parmesan, a smear of miso and a sprinkling of furikake, or serve with a runny sunny-side up egg and a drizzle of hot sauce.

Welcome back to “potato week” here at Simple Life and Home! Yesterday, I shared one of my favorite potato side-dish recipes: creamy potato casserole. Today, I’m sharing one of my favorite potato-cooking shortcuts: how to bake a potato in the microwave.

This tip has been revolutionary at my house. It all started when we invited friends over for dinner years ago. I had the chicken ready to put on the grill but had forgotten to place the potatoes in the oven to bake. Yikes! There was no way I could bake the potatoes in time to serve with the chicken.

That’s when my friend graciously shared this baked-potato shortcut, and I’ve been using it ever since.

Here’s how to bake a potato in the microwave:

1. Scrub the potato under running water.

2. Pierce the potato several times with the tines of a fork and wrap it in a wet paper towel.

3. Place the wrapped potato in the microwave and cook it on HIGH for five minutes. (The steam from the wet paper towel will keep the potato from drying out.)

4. Carefully remove the potato from the microwave with a potholder and give it a slight squeeze. If the potato squeezes easily, it’s done. If not, put it back in the microwave in one-minute increments, checking after each minute to see if it’s done cooking.

Easy peasy. Potato squeezy. ?

Here are a few more tips:

  • If you’re baking several potatoes at once, you’ll have to increase the baking time. I recommend starting with five minutes, then increasing by two-minute increments until they all test done.
  • If you are grilling, start the potatoes in the microwave. After five minutes of baking in the microwave, remove the damp paper towels and wrap the potatoes individually in aluminum foil. Place them on the top rack of the grill for another five to ten minutes of baking time.

These days, I always start baking potatoes in the microwave first, then finish the baking on the grill. It cuts the baking time in half, and I don’t have to have the grill on so long.

Lately, my kids have picked up on this baked potato tip. They often make themselves a baked potato snack in the afternoon, or they add toppings to a baked potato for a healthy lunch. So many possibilities!

Baked potatoes are a cheap, filling food that’s easy to make and super tasty. They’re delicious, and they can help to class up your ramen-filled college dinners. They even make a good snack. They’re basically the perfect food. A superfood, even. Load ‘em up with cheese, sour cream, plain yogurt, bacon… you get the idea.

Unfortunately, anyone who’s gone away to school and lived in a dorm runs into a lot of struggles when they try to cook. One of those problems is the lack of ovens. Most dorms are equipped solely with a microwave, and if you don’t know what you’re doing, microwaves can make some pretty crappy, soggy baked potatoes.

But fear not, dormies. There is a way to make decent microwaved baked potatoes, and it’s pretty dang easy.

Microwaved Baked Potao

  • Prep Time: 1 minute
  • Cook Time: 5 minutes (or more, depending on the size of your potato)
  • Total Time: 6 minutes

    Ingredients

    Step 1

    First, choose your potato (we suggest Russet potatoes or Yukon Gold). I used Yukon Gold.

    Step 2

    Be sure to wash your potato. You don’t want to eat a dirt covered potato. Please scrub it well beforehand. Just don’t use soap, or else you’ll ruin the potato.

    Poke some holes into the potato with a fork. This is important because the holes allow steam to escape from the potato – just four or five fork jabs will do.

    Then, rub the potato with olive oil or vegetable oil. Not only does the oil add a little flavor, it’s supposed to keep the potato’s skin from wrinkling or from being too tough. If you’re feeling extra adventurous, you can even use the oil, potato, and microwave to make some potato chips.

    Season your potato with salt & pepper. Seasoning makes the difference between a good baked potato and a lame, boring one.
