Pork tenderloin is one of the finest cuts of meat. It’s very lean and tender and can be seasoned any number of wonderful ways. For this recipe we’ll use a combination of simple pantry ingredients to season the pork, before roasting it in the oven for about 30 minutes.

Make Sure It’s Pork Tenderloin

There’s a few cuts of pork that have similar sounding names. Be sure the packaging clearly says pork tenderloin. They are basically long and slender and weigh around ¾lb to 1 ½lbs each. It’s also quite common to find them in 2-packs. Other similar names including pork loin, pork loin filet and pork roast are NOT pork tenderloin and require different cooking steps.

Simple Pantry Ingredients

I love to make recipes where I have most of the ingredients already on hand. For this roasted pork tenderloin, we’ll use a simple rub which includes brown sugar, salt, pepper, ground mustard, paprika, onion powder, garlic powder, and a hint of cayenne (optional, be really good).

Easy Preparation

Another reason I love making this recipe is because it’s so simple to prepare. All you have to do is mix the ingredients together, rub some olive oil on the meat, and then coat it well with the seasoning rub. Place it into a baking dish or pan and into the oven it goes. No need to sear this recipe first, that’s one less step we needn’t worry about. Just rub the seasoning on and it’s ready to go in the oven!

Roast at 425° (F) for 25-30 minutes

We want the pork tenderloin to have an internal temperature of 145°(F). An instant read thermometer is an essential tool everyone should have on hand. After 25 minutes, check the thickest part of the meat. Once the internal temp is at least 145°(F), you’re good to remove from the oven. Set the pork tenderloin on a plate and let it sit for at least 5 minutes before slicing and serving.

Remember to remove your pork tenderloin joint out of the packaging, pat dry and bring to room temperature

Pre heat your oven to 200 oc temperature fan assisted or 215 oc without a fan

Season the joint just prior to roasting

Choose a large, heavy based roasting tray, ideally with deep sides and handles for easy movement

Massage with a little olive oil, duck or goose fat or alternatively wrap in very thin slices of pancetta Season with good quality fine sea salt in not using the pancetta

Next fry the tenderloin on all sides creating a rich golden colour in a non stick fry pan

Make a trivet by roughly chopping equal amounts of onion, carrot and celery or my preferred choice of celeriac, the root of the celery plus a bay leaf, sprig of thyme and a few black peppercorns, another nice addition can be a bramley apple peeled and quartered to the trivet

Place the pork onto the trivet which should line the base of the tray

Place in centre of oven and roast for 20 minutes reaching a core temperature of minimum 68 oc

Remove from oven and pop onto a clean tray and keep warm by covering with a sheet of tin foil then resting for a minimum of 10 minutes before carving, leaving the roasted vegetables in the tray for the gravy

  • For the gravy I make up 300 ml of essential cuisine chicken stock, then deglaze roasting tray with this stock stirring all the caramelized juices from the tray, then pass through a fine sieve pushing all the juices from the vegetables into a clean sauce pan, bring to the simmer and thicken if required by whisking in a teaspoon of corn flour mixed with a little cold water and reduce till you reach a rich glossy gravy

    How to make Pork Tenderloin in the oven?

    Preheat oven to 425 F.

    Line a sheet pan with aluminum foil.

    In a bowl, whisk together the mustard, olive oil, salt, pepper, garlic powder, oregano and balsamic vinegar.

    Pour the mixture over the pork and rub to coat.

    Place meat on the baking sheet.

    Add the vegetables. I used Brussel sprouts. Season them with salt and pepper and drizzle with some olive oil on top.

    Bake for 20-30 minutes, until the internal temperature of the meat is 150 F. Take out of the oven, place on a cutting board and let the meat rest for 10 minutes. You can cover with foil, while resting.

    At this point Brussel Sprouts may be done cooking or require a few more minutes of roasting. Cook until they are crispy and golden brown.

    Slice the meat and serve.

    Depending on the size and thickness of the piece of pork and the pan used, it takes between 20-30 minutes to bake pork tenderloin in the oven at 425 F. A probe oven thermometer will be very helpful in this recipe.

    Cook until the internal temperature reaches 145 -150 F and then let it rest, covered with foil for 5-10 minutes, before cutting.

    What sides go well with this baked pork tenderloin?

    The good thing about this recipe is that you can bake your side dish together with the meat. Of course, it may take more or less time to roast the vegetables, so I advice you to keep a close eye on them. If the meat is ready before the veggies, take it out and continue cooking. If the vegetables are fully cooked, but the pork needs a little more time, remove the veggies and continue cooking the pork tenderloin.

    Step 1

    • Pork Tenderloin: Be sure to buy a pork tenderloin, not a pork loin. A pork loin is much larger than a tenderloin and would take longer to cook through.
    • Seasonings: Paprika, dried thyme, garlic powder, salt and black pepper are a delicious combination of seasonings that add lots of flavor to the meat. This seasoning blend is a variation of my favorite Pork Rub recipe. I used sweet paprika but feel free to use smoked paprika for a smoky, spicy flavor.
    • Olive Oil: You’ll add the olive oil to the skillet when browning the pork.
    • Garlic: Fresh garlic brings a punch of flavor to the sauce that’s used to glaze the pork.
    • Soy Sauce: For umami flavor. I recommend using a low sodium soy sauce.
    • Dijon Mustard: Helps to emulsify the sauce together and also enhances the flavors. You can use either a smooth or grainy Dijon mustard. The finished dish does not have a strong mustard flavor, but feel free to omit the Dijon if you prefer.
    • Honey: Honey adds a touch of sweetness and balances out the savory flavors of the mustard, soy sauce and garlic.

    4. Heat the olive oil in an oven safe skillet over medium high heat. I used a cast iron skillet. If you don’t have an oven-safe skillet, you can transfer the pork to a sheet pan or baking dish after browning it in a pan on the stove.

    How Long to Cook Pork Tenderloin/Pork Tenderloin Temperature

    This pork tenderloin recipe takes about 20-25 minutes to cook in the oven at 400° F. The cook time will depend on how much you brown the pork in the skillet and also the thickness/size of your pork tenderloin. Brush the pork with the glaze when it has just a few minutes left in the oven.

    According to the USDA, pork tenderloin should be cooked to at least 145° F and then allowed to rest for 3 minutes before serving. At 145° F, pork may be a little pink in the center. If you like your pork more well done you can cook it to 155° F. Use an instant read thermometer to test the meat for doneness.

    I like to serve a starch and a vegetable with this baked pork tenderloin. Here are some of my favorites:

    • Potatoes:Mashed Potatoes, Garlic Mashed Potatoes or Instant Pot Mashed Potatoes are my go-to side dish for pork tenderloin. Or, try Roasted Potatoes, or an Air Fryer Baked Potato.
    • Rice:Instant Pot Rice or, for a whole grain option, Brown Rice.
    • Green Beans: You can’t go wrong with this classic vegetable side dish. We enjoy Instant Pot Green Beans, Sautéed Green Beans and Roasted Green Beans.

    The baked pork tenderloin can be stored in the refrigerator for up to 2 days. To reheat, slice and wrap in foil (to keep moisture in), then bake in a 350° F oven for about 10 minutes, or until hot. Alternatively, you can gently reheat sliced pork tenderloin in the microwave.

    • 2 (1 lb each) pork tenderloins – package usually comes with two tenderloins
    • 1 tsp paprika
    • 1 tsp ground cumin

    • 1/2 tsp garlic powder
    • 1/8 tsp cayenne pepper – increase or decrease for more or less heat
    • 1 tsp freshly ground black pepper – crack a bit larger if possible

    • 1 Tbsp light olive oil – vegetable oil works well too
    • 1 1/2 cups low-sodium chicken broth
    • 1 1/2 tsp minced fresh garlic
    • 2 tsp cornstarch mixed with 1 Tbsp low-sodium chicken broth

    How To Prepare and Cook Pork Tenderloin

    1. Preheat oven and pan: Place a 12-inch cast iron pan in oven and preheat oven to 450 degrees. This should take about 15- 20 minutes of pan resting in oven.
    2. Mix spices: Meanwhile in a mixing bowl whisk together paprika, cumin, coriander, chili powder, garlic powder, cayenne pepper and pepper and season with salt as desired.
    3. Rub spices over pork: Rub seasoning all over pork tenderloins to even cover.
    4. Add oil and pork to preheated pan: Once oven is preheated remove pan from oven, immediately add oil and swirl in pan then place pork tenderloins in pan (don’t forget pan is hot! Use oven mitts/or thick kitchen towels to handle pan).
    5. Bake: Return pan to oven and let roast 10 minutes.
    6. Turn and continue to bake: Insert an oven meat thermometer in tenderloin (if you have one, otherwise you can just remove roast occasionally to check temperature) and continue to roast until pork registers 145 degrees in thickest portion of each, about 8 – 14 minutes longer.
    7. Let rest before carving: Remove from oven and transfer roast to a carving board. Tent with foil and let rest 5 – 10 minutes.
    8. Make pan sauce: Meanwhile place pan on stovetop over medium heat. Add garlic and saute about 20 seconds. Pour in chicken broth and let cook until sauce is reduced by about half, about 4 – 5 minutes.
    9. Thicken sauce: Whisk in cornstarch chicken broth mixture and let cook until thickened, about 1 minute. Season with salt and pepper if needed.
    10. Cut tenderloin, serve: Carve tenderloin into 1/2-inch thick slices and serve with pan sauce.

    At about 400 to 450 degrees 1 pound pork tenderloin takes about 20 – 25 minutes per lb. And here we are using two separate 1 pound portions so that is right about where we land.

    • The USDA recommends cooking pork tenderloin to 145 degrees to kill of any potentially harmful bacteria.
    • That temperature should be taken from the thickest portion in the center.
    • Use an oven probe thermometer or an instant read digital food thermometer to take the temperature.

    Yes as long as it has reached an internal temperature of 145 degrees. Originally the USDA recommended an internal temperature of 160 for whole cuts of pork but they have reduced that to 145 degrees which means pork may just be lightly pink and that is fine.

    Plan on about 1/3 pound per person (around 5 oz.) so here you should get about 6 servings.

      Today we’re sharing our tips and tricks for preparing Perfect Pork Tenderloin at home. Pork tenderloin is very easy to make, delicious, and great served with just about any kind of side dish your family enjoys.

      This Perfect Pork Tenderloin method has been a favorite of ours for a long time – in fact, anytime we make this recipe, Jack and I have a good chuckle with each other! Here’s our story:

      Years ago, Jack and I lived in small apartment while we saved up money for our house down payment. The kitchen was the size of a closet with poor ventilation and super-sensitive smoke detectors.

      One night, I was making this recipe for dinner and – as usual – I set off the smoke detector in the apartment while I seared the pork tenderloin! To clear the kitchen of smoke, I opened the door to the hallway that led out to the other apartments – and promptly set off the smoke detectors in the ENTIRE apartment complex!

      Needless to say – I was super embarrassed when we evacuated outside (along with dozens of other apartment dwellers), and I had to tell the fire department that it was just me cooking dinner and I set off the alarm! Fast forward to today – and we’re showing you the proper method to make perfect pork tenderloin without involving your local fire department! 🙂

      One final note: There is nothing worse than over-cooked, dry pork tenderloin! But many people still cook pork until it is no longer pink on the inside because in the past, people were concerned about getting trichinosis by eating pork from pigs that were given food scraps to eat. Today, because of advances in food safety and because USDA certified animals are fed grain, the USDA guidelines now state that pork can be safely consumed when cooked to an internal temperature of 145 degrees F with a resting time of three minutes.       Pork tenderloin has gotten a little more expensive over the past 5 years, but it’s still a relatively affordable cut of meat.

      Especially considering it’s trimmed up already, and there’s no excess fat to cut away.

      What you get and cook is pretty much all lean protein that can be sliced and served.

      Just as with beef tenderloin, pork tenderloin is a really lean cut, but relatively tender since it’s not a heavily used muscle.

      Because it’s so lean, I like to flavor it with a marinade or at least with some spices, which I’ll go over further below.

      One really nice thing about roasted pork tenderloin is how well it goes with many different types of sides and dishes.

      I love serving it with Greek Zucchini Salad, but this Mediterranean Quinoa Salad goes really well with it too.

      How to Make Roasted Pork Tenderloin:

      This first step is optional, but I like to flavor the pork with a marinade or spice mix.

      While you can do just salt and pepper, pork tenderloin is such a lean cut of meat that it really needs some sort of flavor.

      If I don’t have the time to marinade, I’ll at least rub on some Sazon Seasoning, which goes beautifully with pork.

      To cook the pork, heat a large ovenproof skillet over medium high heat, then sear the pork tenderloin all over for about 3 minutes total, until golden brown:

      Technically you could skip this step and just throw the pork tenderloin in the oven, but it will look a bit pale on the outside.

      The searing also helps develop flavor and caramelization on the outside.

      After searing, place the entire skillet into the oven. The pork will receive heat from the hot air circulating around, plus it will keep searing from the heat of the skillet.

      So, I’ll flip the pork over about halfway through the oven roasting period to keep things even.

      How Long to Roast Pork Tenderloin:

      For the standard 1-lb or 1.25lb piece of pork tenderloin, usually no more than 10-15 minutes in a 450F oven. You want the interior temperature to reach 140F.

      A thermometer (affiliate) is essential for making pork tenderloin, as it’s more difficult than other cuts of meat to go by feel. Since there’s such little fat in the meat, there’s little wiggle room for overcooking.

      You can get a good thermometer for $10. I use mine all the time because I don’t like risking overcooked meat.

      Once the pork has reached the target temperature of 140, remove it to a plate and let it sit for 10 minutes.

      During this time, the pork will continue cooking another 5 degrees or so, and the juices will get a chance to redistribute.

      If you’ve ever cut into a piece of meat right out of the oven and had all the juices come rushing out onto the plate, that’s because the meat needs a chance to rest.

      Cut the pork into slices, and serve. I like to collect any of the juices from the plate and put them into a little bowl on the side for dipping. There’s so much flavor there.

      Instructions

      1 – In a small bowl, mix seasonings together to make a dry rub. Put pork in a pan and rub all sides of pork roast with seasonings. Place pork in the bottom of a dutch oven.

      Although pork tenderloin is one of the most tender cuts of pork, overcooking it can make it tough and unpalatable. This is a cut of meat you do not want to cook over low heat all day long in a slow cooker or Dutch oven. Instead, the trick to ensuring tenderness is to cook it at a high temperature as quickly as possible.

      Cooking it in the oven is your best method, according to Chef Larry White, owner of Lo Lo’s Chicken & Waffles and Brunch & Sip in Arizona. Here’s how you can go about cooking pork tenderloin to ensure tenderness.

      Things You’ll Need

      Step 1: Rub the Tenderloin or Let It Marinate

      It’s up to you whether you want to marinate it or not: “It isn’t a requirement to marinate your tenderloin to get that perfect amount of flavor,” White says. “For the most part, pork tenderloin is cooked quickly and easily, with no brining needed.”

      ​Rub:​ You can create a rub of salt, pepper and your choice of spices in a small bowl. Then, rub it on the tenderloin, making sure you cover all sides of the tenderloin, White says.

      ​Marinade:​ Marinating is another option if you prefer going that route: White recommends a marinade of orange zest, olive oil, rosemary and garlic. Mix your marinade in a small bowl and put it in a resealable bag with the tenderloin to sit for 1 to 4 hours.

      It’s important not to let it sit for too long. “Marinating it overnight can destroy the structure of the meat,” White says.

      Step 2: Preheat the Oven and Prep the Pan

      Preheat the oven to 425 degrees Fahrenheit. Then, get your pan ready.

      The best method of cooking is to use a large cast-iron pan, White says. Use a little bit of cooking oil and swirl a thin layer around the inside of the cast-iron pan.

      Step 3: Pat the Pork Dry

      “Make sure the pork is dry by patting it with napkins or paper towels before putting it in the cast iron,” White says.

      Step 4: Cook the Tenderloin

      Place the pan in the oven and cook for about 15 to 20 minutes. This short cooking time is best for keeping the tenderloin moist — longer cooking times can dry out and toughen a tenderloin, according to White.

      This is why he discourages people from cooking pork tenderloin in a slow cooker. “Although it can work for pork shoulders or pork butt, it can dry out tenderloins as it cooks for a long time at low heat,” he says.

      You’ll know your pork tenderloin is done when your meat thermometer shows an internal temperature of 140 to 145 degrees. “It’s perfect when it has a tiny, soft pink center,” White says.

      You can also make good use of the drippings. “The pork juice that is released from the tenderloins while cooking is perfect to put on top of rice or mashed potatoes,” White says.

      Why Is My Pork Loin Tough?

      Your pork tenderloin might be tough because it was cooked for too long. Despite your best efforts, you might accidentally overcook your pork tenderloin, but don’t let it go to waste.

      In this situation, White recommends putting it into the food processor with your choice of sauce: try barbecue sauce, Buffalo sauce or lemon-pepper sauce. Then, put the processed pork on a sandwich. “You can also use it for potstickers and egg rolls,” he says.

      Avoiding toughness and dryness is paramount to a good tenderloin. To up the moisture content of your tenderloin and avoid toughness, White recommends pouring apple cider vinegar over the pork. This will not only help it stay tender but also add a blast of flavor.

    INSTRUCTIONS

    • 1 Preheat oven to 350ºF. Arrange opened Cooking Bag in 13×9-inch baking pan or dish. Place pork tenderloins in bag.

And you could change up the vegetables too, using aubergine, squash or cabbage in place of the courgettes and peppers here.</p> <h3><strong>Family friendly steam oven meals</strong></h3> <p>Because family friendliness is the name of the game for my dinners, and many of yours, I try to cook things which the kids willingly eat, but can also be bumped up to adult-worthy meals with simple additions. It’s small, lean and tends to dryness when overdone, so the addition of steam during cooking is hugely beneficial and gives a couple of minutes grace time in the cooking process.</p> <p>I like to cook pork tenderloin hot and fast, never really giving it time to dry out. And though you could pan fry it quickly to brown the outside before putting it in the oven, I am inherently against adding another pan to wash, so I don’t bother. It was either underdone or cooked so long it resembled jerky when chewing it. I just couldn’t seem to find the sweet spot when it came to pork.</p> <p>What changed things for me? A digital meat thermometer with a temperature alert feature. You set the temperature you would like your food to be cooked, insert the probe, and put it in the oven (or grill or slow cooker). It’s oven safe and an alert will go off when the desired temperature has been reached.</p> <p>I’m telling you, the thermometer is a complete game-changer. If you want to do this in a Dutch oven, I would sear as directed using your Dutch oven, then remove the tenderloin from the Dutch oven and coat with spices as directed. Wipe out the Dutch oven then add the spice-coated tenderloin and roast, uncovered, until the internal temperature registers 142-145 degrees F. This will likely happen a bit faster in a Dutch oven, so I would start checking the temp after 10 minutes of cooking. Once the tenderloin has reached the desired temperature, remove the Dutch oven from the oven and immediately transfer the tenderloin to a cutting board to rest. Let me know how this works! Goodluck!</p> <p>Baked pork tenderloin is one of my favorite pork dishes. Pork tenderloin is very lean and healthier than most other meat cuts out there. If cooked properly, it can be very flavorful, moist and tender. Baking in the oven is probably the easiest and most fool-proof way to cook tenderloin. It doesn’t have that smoky flavor of the smoked pork tenderloin but it’s delicious anyway. It does not take long to cook and can be fully done in about half and hour – just throw it in the pre-heated oven and, 25 minutes later, a delicious dinner is ready.</p> <p>Tenderloin by itself is not a very flavorful piece of meat, just like chicken or turkey breast, so it really benefits from either injecting or marinating. I like both methods, and which method I pick really depends on my mood and circumstances.</p> <p>Marinating is less messy and easier – you just mix salt and spices, rub on the meat, and refrigerate. All the spices and salt evenly penetrate the meat, making it perfectly seasoned and flavorful throughout.</p> <p>Just like with cooking chicken or turkey breast, it’s crucial not to overcook tenderloin as it’s a very lean cut and will start drying out really quickly when the temperature starts getting close to 150F. USDA recommends cooking pork steaks, chops, roasts to internal temperature of 145F.</p> <p>At this temperature the meat is tender and juicy, with a light pinkish hue in the center. If you are not fond of the pink color on your baked pork tenderloin slices, take the internal temperature to about 150F – 155F. The meat will be just a tad drier, but still very much succulent and tender. Make sure to use an accurate instant thermometer like ThermoWorks Thermapen or any other to help you hit the right temperature. In my oven on top rack tenderloins hit 145F at about 20-22 minutes and 150F at about 23-24 minutes.</p> <p>Who says you need an Instant Pot to make a quick, easy, juicy <strong>Pork Tenderloin</strong>? Not me. The one in the picture baked for 30 mins, and it’s done. If you want it more pink roast it for about 25 min more or less.</p> <p>Roast at 400 Fahrenheit/ 200 Celsius.</p> <p>Cook it covered for the first ⅔ of the cooking process. Then add the slurry and finish roasting it uncovered.</p> <p>Yes! Searing brings out the wonderful flavors of the meat. It will have a lovely golden brown color on the outside, which looks nice too when you are serving up your meat.</p> <p>Follow the heat and time instructions in the recipe. You can cut in to check if it’s done to your liking. Another and even better idea is to get a meat thermometer. Poke the thermometer into the meat to see the inside temperature. Most grocery stores sell them in packs of 2, which is perfect for this recipe.</p> <p>You’ll also need a few herbs and spices to create an easy dry rub. This will help create that beautiful and delicious caramelization on the outside that creates a ton of flavor!</p> <p><strong>Use a meat thermometer</strong> to check the internal temperature of the pork<strong>.</strong> Not only will this help you determine if the pork is underdone, but it will also help you make sure it’s not overcooked! Here’s my favorite <strong>in-oven meat thermometer</strong>.</p> <p><strong>Let it rest.</strong> After removing the pork from the oven, transfer it to cutting board and let it rest for 5 minutes.
