  • 4 Cups spinach leaves
  • 1 Onion chopped
  • 2 tbsp Plain flour
  • 1 Cup milk
  • 2 tbsp Butter
  • 1 tbsp Fresh cream
  • 2 Cups water
  • Salt and pepper to season
  • Wash the spinach leaves and remove the thick stems.
  • Boil it along with the water for about 8 minutes, till the spinach is well cooked.
  • Cool and puree it in a blender, set aside.
  • Take a pan and heat butter in it.
  • Add the chopped onions and fry over medium heat for about 3 minutes, until the onions are transparent.
  • Add the plain flour and fry it over low heat.
  • Now combine the spinach puree, milk, salt and pepper with it.
  • Simmer over low heat for about 3 minutes.
  • Before serving, add the fresh cream.

Safety Note about Blending Hot Liquid : Hot liquids in a blender are a potential kitchen catastrophe! The steam expands when you blitz the liquid and if sealed tightly, can cause the blender to explode!

To avoid a hot mess- and a possible ER visit:

  • Allow the liquid to cool a bit
  • Blend in small batches
  • Vent the blender lid (take out the piece in the center and cover with a towel)
  • Start on low before moving to higher speeds

Gently Heat the Cream: Low and slow is the best way to heat any kind of dairy. Dairy, particularly milk, will split and curdle when heated to aggressively. You can also take your cream out of the fridge and allow it to warm on the counter while you’re assembling the rest of the soup. This way, it won’t go through such an extreme temperature shift and will be less likely to split.

A Light and Delectable Winter Soup!

I made this yummy soup in about 20 minutes. Sweet corn kernels and spinach are the main ingredients, with onions and mild spices rounding out the recipe. My family enjoys sipping this colorful and yummy chowder. It certainly warms them up on a cold winter evening!

Not only is this soup delicious, but it is also nutritious, too, as corn and spinach are known to have many nutrients.

Cook Time

Serves 4 people


  • 2 heaped cups spinach leaves, chopped (remove stems before chopping)
  • 1 cup corn kernels, fresh or frozen (I use fresh)
  • 1 onion, finely chopped
  • 1/3 teaspoon pepper powder, to taste
  • 1/3 teaspoon sugar, to taste
  • 1/2 teaspoon salt, to taste
  • 1 teaspoon oil
  • 1 teaspoon corn flour
  • 3 cups water


  1. Take 2 teaspoons of corn kernels in a mixer or blender. Roughly grind it. Set aside.
  2. Boil the remaining kernels in a pressure cooker, up to 2 whistles. Turn off the heat. Set aside.
  3. Heat oil in a deep-bottomed pan. Add chopped onions. Saute until they turn pinkish.
  4. Throw in chopped spinach. Add salt and sugar. Saute until spinach becomes soft. This step may take about 5 minutes.
  5. Add roughly ground sweet corn. Boil the mix for about 2 minutes. Add boiled sweet corn kernels.
  6. Add 3 cups of water. Throw in some pepper powder. Give a good mix. Let the mixture boil for 2-3 minutes. Check the taste. Adjust the seasonings accordingly. Turn off the heat.
  7. Your favorite corn spinach soup is ready. Serve it hot and enjoy the yumminess!

Happy New Year, friends! I hope you entered 2019 full of hope and goals. And hopefully not too hungover…

Me? My party days are long gone and I went to bed at around 10pm. This pregnant gal has been rocking some fuzzy socks and yoga pants while reading a book by the fire these days! And craving all the soups!

Gestational diabetes got me again, but I refuse to let it take away my joie de vivre, AKA my joy of eating! So I’ve ditched (most of) the carbs but am in a committed relationship with cheese and cream. And bacon, of course! Which I was tempted to add to this soup but was afraid people with weight loss New Year’s resolutions would run for the hills.

So, yeah… this soup is pretty low carb and GD friendly. But oh so delicious!

The inspiration for this spinach soup came from a craving I had recently.

I couldn’t stop thinking of these creamed spinach crostini that my mom makes and had the idea of transforming them into a soup.

Most of the recipes for Cream of Spinach Soup will ask you to blend the ingredients. Mine doesn’t! I’m after that steakhouse creamed spinach vibe, so the chunks of spinach are very much celebrated here.

That being said, if smooth is your jam, go ahead and puree the soup! It will taste just as good!

How to make Cream of Spinach Soup

This soup is made by sautéing shallots and garlic in butter and then adding a bit of flour (for thickening), a pound of spinach (sounds like a lot but we all know that the spinach elves make them shrink when they cook!), some spices (life is too short to be bland!), heavy cream, chicken (or vegetable) broth and parmesan cheese.

If you live a keto lifestyle, you can omit the flour or explore other thickening ingredients. The amount of flour here is okay for my current low carb diet, so I haven’t really played with anything else. If you find something that works, feel free to tell me in the comment section below and I’ll make sure to update the post with your suggestions!

As for the spinach, you can easily substitute frozen spinach for the fresh called for in the recipe. However, frozen spinach has extra water, so make sure to wait for it to evaporate while sautéing, otherwise you will have to adapt the amount of liquid in the recipe.

Crusty bread is a must with cream soups! Or with all soups, really. Croutons are also a good option!

And let’s not forget bacon. This soup really benefits from a handful of crumbled bacon!

A sprinkle of grated parmesan invokes that steakhouse creamed spinach vibe and brings a taste of indulgence. Even better if you splurge in good quality Parmigiano Reggiano!

Can I freeze creamy soups?

I am not a fan of freezing soups that contain dairy. I find that they separate and get a weird grainy texture once reheated and are not the same.

If you are meal prepping the soup for the future and would like to freeze it, I would prepare it without the heavy cream and then add it once you are defrosting and ready to serve.

Cut & clean spinach

  • Cut off roots of spinach then peel away some of the thin fibrous layer covering the entire stem.
  • Cut the spinach into portions approximately 10 cm in length.
  • Rinse to remove all traces of dirt till water runs clear, then drain andset aside.

Boil Soup

  • Add ikan bilis to a pot of boiling water.
  • Heat up ½ tbsp oil in a soup pot or wok. Fry garlic till fragrant & add dried ikan bilis broth.
  • Bring to a boil, add wolfberries & boil for 2-3 mins.
  • Add spinach, salted egg and century egg.
  • Stir gently and cook for about 2 -3 minutes till the spinach is tender, then add beaten egg.
  • Season with salt if necessary.

Lovely and Delicious Spinach and Carrot Soup!

Sipping a hot and tasty soup on a winter evening is a delightful experience. This soup, with its beautiful color and healthy ingredients, not only provides warmth to your body, it uplifts your mood as well. This dish is a good source of fiber, iron, protein, antioxidants, and vitamins A and E.

This soup is mildly spicy, smooth, and highly flavorful. All you need to do to make it is saute the veggies in butter, puree it, and then boil it with milk.

Let me share with you the detailed recipe.

Cook Time

Serves 4 people


  • 3 tablespoons onion, finely chopped
  • 3 cups spinach, washed and finely chopped
  • 1/2 cup carrot, washed, peeled, and thinly sliced
  • 1 teaspoon black peppercorns
  • 1 teaspoon butter
  • 2 cups milk
  • 1/4 teaspoon salt, or to taste


  1. In a deep-bottomed pan, add butter, chopped onions, and black peppercorns. Heat it. Saute the mixture on medium heat for 1 minute.
  2. Add carrot slices and some salt. Saute for 2 minutes.
  3. Add some water. Cover the pan with a lid. Cook the mixture till the carrot slices become soft.
  4. Add the chopped spinach. Remove the lid. Saute on medium-high heat until the spinach is cooked. Spinach cooks fast; it may take only 3-4 minutes to cook. Turn off heat. Set aside the pan to cool.
  5. When the mixture has cooled, add it to a mixer (blender) jar. Grind to get a smooth paste.
  6. Transfer the paste back to the same pan. Add milk and 3 cups of water.
  7. Boil the mixture for 2 minutes. Add salt if needed. Turn off heat. Smoky-flavored spinach-carrot soup is ready!
  8. Serve it hot and enjoy.

Until one day I had creamy spinach soup with mozzarella balls on a lunch menu at a hotel. I was hungry, so having no other choice I tried it. And it was awesome! I don’t know what was I thinking not loving spinach before. So for years, we have perfected our spinach soup recipe to get it as close as possible to the one I ate at the hotel. Finally, I think we figured it out. The secret is the potato. Who knew, right?

This spinach soup recipe became even the FAVOURITE soup of our older daughter. Seriously…

You need only 5-ingredients. Nothing fancy or hard to get. Whole foods all the way: onions, garlic, spinach, potato, and vegetable broth. Watch this quick slideshow on how to make cream of spinach soup or read on.

Step 1 – Prepare your vegetables

Wash the fresh spinach leaves. Peel and finely chop the onion and the garlic. Peel and dice the potatoes. You can shorten the cooking time by dicing the potatoes smaller like 1 * 1 inch.
